## Ingredients
- 1 cup short-grain rice (bomba or arborio)
- 2 cups broth
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 2 Tbsp olive oil or butter
- 1/2 cup dry white wine
- 1/2 lb shrimp (peeled, deveined)
- 1/2 mussels (cleaned and scrubbed)
- 1/2 squid (sliced into rings)
- 1/2 tsp saffron threads (optional)
- 1/2 tsp smoked paprika
## Steps
- Heat broth
- Heat fat
- Add onion and garlic until fragrant
- Toast rice for 1-2 minutes
- Deglaze with wine
- Cook rice like risotto for 12-15 minutes
- Add seafood and cook for 3-5 minutes
