Help! I’ve fallen in love with arroz meloso and I’m going to tell you about how it relates to part of my life philosophy.
First of all, it is a rice dish that’s cooked slowly in a flavorful broth with aromatics and a variety of toppings. The end result could be described as a risotto or a porridge. After mindfully stirring for around 30 minutes and letting the rice soak up all of the broth, you'll get treated to an unctuous medley of flavors. The Spanish describe this texture as like honey. Finally you'll have a velvety porridge that fills your soul with warmth.
Cooking arroz meloso reminds me of learning how to cook Korean meals from my mother. Nothing is ever really measured--only tasted. Additionally, stirring the rice feels like a practice in patience, like waiting for kimchi to ferment. It's only when you trust the process that the results will show.
Even though it's cliché, It's also both an art and a science to make. One must fold the rice so that all of the grains are cooked evenly and it feels like meditation. Stop stirring for too long and the spices will burn.
In a world where speed and working quickly is more and more important, I love taking the time to cook something with intention. In the end it helps me recover and save my energy for the juggling the projects that I'm working on. Plus it helps that I can cook and eat it in less than an hour.
