## Ingredients
### Roasted Garlic
- 3 heads garlic
- 6 tsp olive oil
### Garlic Chips
- 1 cup neutral oil
- 6 garlic cloves
- Salt
### Potatoes
- 2 kg red or russet potatoes
- 0.5 L heavy cream
- 2 fresh bay leaves (or 4 dried)
- 1 Tbsp fresh rosemary (and garnish)
- 1 Tbsp thyme leaves
- Salt
- Black pepper
- 3/4 cup unsalted butter, plus more
## Preparation
1. Boil water; heat oven to 400F or 200C
2. Prep [[#Roasted Garlic]]
1. Cut off tops of garlic and discard
2. Wrap in aluminum foil after drizzling oil
3. Roast in oven, 40 mins - 1 hr
3. Prep [[#Garlic Chips]]
1. Line plate with paper towels
2. Heat oil until shimmering
3. Work in batches and fry garlic until golden brown (30 sec - 1 min)
4. Season with salt and pepper
4. Prep [[#Potatoes]]
1. Boil water
2. Peel potatoes and add them to bowl of water
3. Dice each potato into 1-inch pieces and add them back to water
4. Drain potatoes and add to pot
5. Cook until soft, 13-15 mins
5. Prep herbed cream
1. Add cream, bay leaves, rosemary, and thyme to medium saucepan and bring to boil, about 5 minutes
2. Strain mixture, rinse saucepan, return sauce to pan, and season with salt and pepper
6. Finalize potatoes
1. Mash potatoes with herbed cream and butter
2. Add garlic, salt, and pepper until desired
3. Garnish with butter, black pepper, thyme, and garlic chips
