## Ingredients
### Kimchi Ingredients
- Napa cabbage
- 1 cup sea salt
- Korean radish, julienned
- Carrot (optional)
- Apple (optional) or pear (optional)
- Bundle of green onions
### Kimchi Paste Ingredients
- Korean red pepper flakes
- Korean salted shrimp
- Korean fish sauce (or Thai fish sauce)
- Minced garlic
- Ginger
- 1 cup sugar
## Instructions
1. Cut cabbage into squares
2. Brine cabbage squares in salted water until the white parts are flexible (about 2 hours)
3. Julienne radish (and optional items)
4. Mix together paste ingredients
5. Mix paste with cabbage and julienned ingredients
6. Ferment with lid lightly covering jar for 1-2 days
7. Store in fridge and enjoy
8. (optional) leave in fridge for up to a week before enjoying for deeper flavor
