## Ingredients
### Soup Base
- one 28 oz can of San Manzano tomatoes
- 1/2 large onion or 1 medium onion, diced
- 6 Tbsp fat of choice (butter, fat, oil, or any combination)
### Aromatic and Umami Ingredients
- 3 cloves garlic
- 1 Tbsp oregano
- 1 Tbsp soy sauce
- 1 Tbsp miso
- 1 Tbsp vinegar (white, red, rice, balsamic)
- 1 Tbsp sugar
- Red chili flakes, to taste
### Liquids
- 1/2 cup heavy cream
- 1/2 cup broth or water
### Finalizers
- Salt
- Black pepper, freshly ground
## Instructions
1. Sauté onions in fat for at least 5 minutes
2. Add aromatics and umami and sauté for 30 seconds
3. Add tomatoes and cook for 10-15 minutes, stirring occasionally
4. Add liquids and cook for 10-15 minutes more
5. Let cool for a few minutes before using a stick blender to desired consistency
6. Add any salt and pepper
