![[korean_pancake.avif]] ## Disclaimer I don't really measure anything when making these, so I'm just approximating the quantities. ## Equipment - Cutting board - Box grater (or chefs knife) - Bowl for mixing - Spoon or ladle for mixing and pouring batter - Frying pan, at least 9” across (non-stick makes this easier, but stainless steel will work too) - Spatula - Plate for serving - Small bowl for sauce ## Ingredients ### Pancake - 1/2 of a leek - 1/4 of a zucchini - 1 carrot - Flour - Water - Salt & pepper to taste - Cooking oil Optional Fillings (the combinations are endless) - Sweet potato - Green onion - Kimchi - Korean chives - Jalapeño - Onion - Mushroom - Any cooked seafood ### Dipping Sauce Start with this ratio and then adjust to taste - 4 parts soy sauce - 1 part clear vinegar (rice or white or Jerez) - 1 part water Optional - Red chili flakes - Sesame seed - Sesame oil - Green onion, thinly sliced ## Mis-en-place ### Sauce - Sauce ingredients together in ### Veggies - Leeks - Cut into thin rings - Soak and massage in water to release any dirt or sand - Drain - Zucchini - Scrub clean - Grate on a box grater, any size will do (or julienne with a knife) - Squeeze gently to release any excess water - Carrot - Scrub clean - Peel carrots - Grate on box grater (smaller setting, or julienne with a knife) ### Batter 2. Put veggies in a mixing bowl 3. Pour water in the same mixing bowl until barely visible under the veggies 4. Add about roughly the same weight of flour as you did water (this doesn’t have to be exact and I didn’t measure anything) 5. Mix gently until a thin batter is made ## Cook 1. Preheat frying pan to medium heat 1. To test, add a drop of water to see if the water spatters gently 2. Add 1 tsp cooking oil 3. Pour in enough veggies & batter until it can thinly cover the frying pan 4. Fry on one side until the edges are visibly cooked—a little bit of browning is ideal 5. Flip and cook on the other side for 3-4 minutes 6.
